Birthday Parties For Children

 

3 Easy Cakes
Yellow, Chocolate, & Spice

1 cup sugar
1/2 cup shortening
2 eggs
1/2 cup milk
1 3/4 cups flour
1/2 teaspoon salt
2 1/4 teaspoons baking powder
1 teaspoon vanilla

1. Beat the sugar and shortening until they are well mixed.

2. Add the rest of the ingredients. Beat for 2-3 minutes.

3. Bake in a greased 9-by-13-inch pan, or in two greased 8-inch layer pans at
350 degrees for 30-35 minutes, or in paper baking cups (filled about 1/3 full)
set in muffin pans at 350 degrees for 20-25 minutes, or until done.

4. Cook and ice with the frosting of your choice.

VARIATIONS

For a CHOCOLATE CAKE, omit 4 tablespoons flour and add 4 tablespoons baking cocoa. For a SPICE CAKE, add 1 teaspoon cinnamon and 1/2
teaspoon cloves.

HEALTHIER VERSION

Many cake recipes taste just as good when the oil/shortening is replaced with applesauce. Use a 1:1 ratio. The texture will be a little different, but the children never seem to notice! You can also replace just 1/2 of the fat with applesauce.
